
Honey Dried Fruit and Chocolate Chunk Cookies

Ingredients
75 gm wheat germ
75 gm rolled oats
75 gm desiccated coconut
150gm wholemeal flour
100gm dried fruit
100gm dark chocolate chunks
½ teaspoon ground cinnamon
60ml milk
1 teaspoon baking soda
125gm butter melted
150gm sugar
2 Tablespoon J. Friend and Co Honey
Method
Preheat the oven to 170C and line a baking tray.
In a large bowl mix together the wheat germ, rolled oats, coconut, flour, dried fruit and raisins. Mix the milk and baking soda in a small bowl. Place the butter, sugar and honey in a large saucepan over medium heat. Leave to melt, stirring occasionally, then slowly bring to the boil. Remove from the heat and add the milk and baking soda – the mixture will froth up. Stir in the flour mixture. Place spoonfuls of the mixture on the baking tray, allowing room for them to spread. Bake for 25 minutes or until golden. Cook on a wire rack then store in an airtight container for up to 2 weeks.
