
Manuka Honey Shortbread Buttons

Ingredients
Makes 24 buttons
225g butter, softened
1/3 cup fine sugar
1/8 tsp ground vanilla pods, (we use Heilala Vanilla)
2 Tbsp J. Friend and Co Manuka Honey
2 cups plain flour
1 cup cornflour
Method
Preheat oven to 190 degrees.
Beat together the softened butter, vanilla, honey and caster sugar until light and fluffy. Add the sifted flour and cornflour, and mix again until well blended.
Chill the dough if it is too soft to handle. Shape the dough into a log, cut slices 1cm wide and place on to a baking paper lined tray. Using a fork, prick each ‘button’ to prevent uneven rising.
Bake for approximately 10 minutes or until the edges begin to brown slightly, remove from the oven and transfer onto a cooling rack. Enjoy!
