
Quick Honey Wheat Bread

Ingredients
2 ½ Cups of warm water
2 tablespoons of J. Friend and Co Manuka Honey
2 tsp dried yeast
2 ½ cups plain flour
2 cups Wholemeal flour
1 ¼ cups wheat germ
1 tsp salt
Method
Lightly brush the inside of a 10 cup capacity loaf tin or similar, (I used a cast iron casserole dish for this loaf) with olive oil. Mix the water and honey together, sprinkle with yeast and stand in a warm place for 10-15 minutes until bubbly. In a large bowl mix together the remaining ingredients. Pour in the yeast mixture and stir well to combine. Turn the dough into the prepared tin and stand in a warm place until doubled in size, (1 ½ hours). Bake at 200C for 30-40 minutes or until a skewer comes out clean. Cover the tin with a lid or tin foil for the first half of baking to prevent burning the top of the loaf. Leave to cool in the tin for 15-20 minutes then turn out onto a rack. Equally delicious served fresh or toasted and spread with butter and honey!
