Loukoumathes - Greek wild Thyme Honey Fritters
1 tsp active dried yeast
185g plain flour
1 cup warm water
Rice Bran Oil, (or olive oil)
J. Friend and Co Wild Thyme Honey to serve
Vanilla sugar to serve
Mix the yeast, salt and flour in a bowl, add the water and whisk to achieve a smooth batter. Pour the oil into a saucepan to a depth of approximately 5cm and heat to 170 degrees. Drop in spoonfuls of the batter and cook for 2-4 minutes or until golden, (turn to achieve an even colour)
Drain on absorbent paper.
Dust in vanilla sugar and drizzle with honey to serve!
