Sticky honey ginger cake with caramel honey drizzle

Ingredients

200gm pitted dates finely chopped
1 teaspoon baking soda
1 cup espresso coffee
2 eggs, lightly beaten
3 tablespoons crystallised ginger finely sliced
½ tsp vanilla paste
110gm butter softened
1/3 cup soft brown sugar
1/3 cup J. Friend and Co Manuka Honey
200gm plain flour sifted
Pinch salt
½ teaspoon baking powder
2 teaspoons ground ginger
½ tsp cinnamon
¼ tsp mixed spice
Honey caramel icing
50gm butter
½ cup brown sugar
¼ cup milk
1 tsp J. Friend and Co honey
¼ teaspoon vanilla paste
2 cup icing sugar
To serve
Crème fraiche or mascarpone

Method

Grease and line a 20cm spring form cake tin with baking paper
Preheat oven to 180 degrees Celsius
Combine the dates, soda and coffee in a bowl and leave to stand for 20 minutes.  Stir in the eggs, crystallised ginger and vanilla.
Cream the butter, sugar and honey until pale.  Sift in the flour, salt, baking powder and spices together then fold the flour in alternatively with the date mixture.
Pour into the tin and bake for approximately 40 minutes or until a skewer comes out clean.  Leave to cool in the tin.
Icing:
Melt the butter and brown sugar in a saucepan, bring to the boil and cook for one minute.  Remove from the heat and whisk in the honey and milk and vanilla.  Stir in the icing sugar to make a smooth icing.  Allow to cool slightly then drizzle over the cake.
Serve with a dollop of crème fraiche or mascarpone
