
Gingerbread Men

Ingredients
150gm butter
½ cup firmly packed soft brown sugar
½ cup J. Friend and Co manuka honey
1 teaspoon baking soda sifted
1 egg lightly beaten
1 tablespoon ground ginger, sifted
1 teaspoon mixed spice, sifted
½ teaspoon baking powder, sifted
3 cups plain flour, sifted
Raisins, chocolate bits etc to decorate
Method
Place butter, sugar and honey in a saucepan over medium heat. Cook, stirring until melted. Bring to the boil. Remove from heat. Stir in baking soda. Set aside to cool.
Stir in egg, ginger, mixed spice, baking powder and flour until combined. Shape into a ball, wrap in plastic wrap and refrigerate for approximately 1 hour.
Preheat the oven to 160 degrees fan bake. Line 3 baking trays with baking paper. Roll the dough between sheets of baking paper until 3mm thick. Using a gingerbread man cutter, (or any other shapes desired), cut the shapes from the dough, re-rolling the dough scraps. Place 2cm apart on the prepared trays.
Bake 1 tray at a time, for 6-8 minutes or until golden and just firm to the touch. Remove from the oven and allow to stand for 5 minutes before transferring to a cooling rack. Decorate if desired!
