
Crepes with Honeyed Apple and Cream

Ingredients
Crepes:
1 cup plain flour
1 Tablespoon sugar
A pinch of salt
2 eggs
2 cups milk
25 grams butter melted
Honeyed Apples:
4 granny smith apples peeled and sliced
25 gm butter
3 Tablespoons of J. Friend and Co Vipers bugloss honey
Cream:
300ml pouring cream
50 grams J. Friend and Co raw honeycomb cut roughly into small chunks
Method
Crepes:
Place all the ingredients in a bowl and whisk until the batter is smooth and is pouring consistency- leave to rest for 30 minutes.
Heat a teaspoon of butter in a frying pan until melted. Add approximately ¼ cup of the crepe batter and swirl in the pan until the batter covers the base of the pan, turn the crepe when the underside begins to turn golden – cook very briefly on this side, (i.e. 30 seconds) then turn out onto a plate, repeat until all the batter is used up, (the crepes should be very thin, if not add more milk to the batter)
Honeyed Apples:
Melt the butter in a frying pan, add the apple slices and toss regularly until the slices begin to caramelise- add the honey and toss until coated – remove from the heat
Cream:
Whip the cream until soft peaks form- fold in the honeycomb chunks.
To assemble:
Place the warmed crepes, prepared apple and cream on a serving tray and let everyone serve themselves!
